Simple Homemade Gluten-Free Tortillas

100 grams (about 3/4 cup) of buckwheat flour
50 grams of all-purpose gluten-free flour (make sure it is cornstarch-free)
3 tbsp of melted coconut oil
450ml of water (sometimes more, depending on the flour you use)
Mix some water with the flour with a spatula until you have a dough.
Then add the oil and mix it.
Use a whisk and whisk it and add more water until it is liquid enough.
Scoop into a non-stick pan and bake slowly.
Flip the wrap once the one side is light brown to bake the other side.
Once baked, let them cool on a baking rack.
When cool, place them on a plate with parchment paper in between to prevent them from sticking together.
Avoid overbaking in the pan to prevent the tortilla from becoming brittle and prone to breaking.
For optimal results, I suggest using a 17" Fry Pan. This size yields generously sized tortillas that create substantial wraps, perfect for a satisfying lunch.
Prioritize your health by selecting a non-toxic pan, as Teflon can be harmful due to its toxicity.
